Wellfleet Oyster

Wellfleet Oysters are farmed in the protected intertidal flats of Northeast Cape Cod. The oysters start their life in a hatchery and are transferred to the beach in grow out bags where they will live until maturity. Wellfleet’s are the most famous of the many Cape Cod oysters due to their rich history dating back many generations. The oysters themselves stand up to their reputation with well-developed shells and plump meats. The flavor tends to be quite salty initially, which mellows out to a sweet finish.
