True (Pacific) Cod

True cod are very similar to Atlantic cod, but their average size is a little smaller.  They range from Oregon to northern Alaska, but the majority of the harvest comes from Alaska.  True cod are bottom dwellers that reside primarily on the continental shelf and are caught by means of trawls and longlines.  They can grow to as much as 30 lbs, although commercially harvested fish typically weigh between 5 and 11 lbs.  The vast majority is sold as fillet.  True cod, with their mild, white, and flaky meat, are widely thought of as the classic American fish.
