Henderson Inlet Oyster

Henderson Inlet is located in southern Puget Sound, Washington. It is a shallow, productive bay with an abundance of food available for oysters to grow and fatten. They begin their life on the beach in bags, but before they finish about half their growth they get transferred directly onto the beach. This is a method that provides a very presentable fluted shell with a deep cup. They tend to be mildly salty, with an earthy sweetness and cucumber finish.
