Jones Creek Oyster

Jones Creek oysters are grown on the western shore of Pickering Passage in southern Puget Sound in a cove that is fed by their namesake, Jones Creek. Hatchery produced seed is grown in bags on the beach until the oysters are mature enough to be finished on the beach. The protection of the cove along with the additional nutrients of the creek creates an ideal location to grow oysters and after about a year here they reach market size. The oysters tend to have a mild initial salinity that makes way for a pleasant sweetness and finishes with the melon flavor the Puget Sound in known for.
