Kachemak Bay oysters are from one of the cleanest bodies of water in the US. Located at the southern end of the Kenai Peninsula in South Central Alaska, Kachemak Bay is known to show no signs of human presence at all in the water. The oysters spend their lives in suspended Japanese lantern nets that stay at a fixed depth below the surface, where they can feed continuously and avoid exposure to the weather and the seafloor. The water temperature rarely exceeds 50 degrees, and the slow growth caused by these cold waters create a deep cup that holds a crisp, plump meat all year long. The runoff from local glaciers give the oysters a full brine and remarkably long, sweet finish. Many people who have not enjoyed oysters are converted on their first bite.
